The Toolangi Chardonnay fruit was allowed to ferment with indigenous yeast. All fermentation was carried out in barrel with no malolactic fermentation. Elevage occurred over 11 months in French oak and 500L puncheons, with 40% being new oak.
Winemaker’s Note: Made from low cropped, hand harvested estate grown fruit taken from our Dixons Creek Vineyard. Bunch thinned to 2 to 2.5 tonnes per acre.
“The 2015 release was again produced at Oakridge by Chardonnay master David Bicknell, a slightly fuller wine than previous years with great texture and mouthfeel. A light straw yellow, a youthful nose of aromatic nectarine with trop notes of flint, honey and almond meal, over time these notes will become more evident. Significant fruit weight on the palate, a subtle line of citrus acidity keeps things flowing with fig and white peach the mainstay; interjections of oak and lees complexity add complexity.
