Pinot Gris grapes were picked early to make this refreshingly crisp grigio style. There is a delicate steely edge to the colour leading to an aroma of freshly cut pears. The finish is dry and beautifully balanced, making this a wine to sip casually or match with lighter style dishes.
The grapes were picked in the cool of the night at optimum maturity, crushed, chilled and the juice immediately separated from the skins to ensure delicacy. Following cold fermentation in stainless steel tanks, the wine was clarified and bottled to maximize freshness and varietal character.
The 2015 harvest was an early vintage following a cool and dry growing season and timely rainfall at veraison. These conditions preserved bright colour fruit and natural acidity of the wines. Made from Pinot Gris grown in Adelaide Hills, Southern Fleurieu, and Barossa Valley.
Serve lightly chilled. Try it with fritto misto, pan-fried veal or simply as a refreshing aperitif.
